簡介
淀粉是一種多糖類物質(zhì)。制造淀粉是所有綠色植物貯存能量的一種方式。它也是人類飲食中最常見的碳水化合物，馬鈴薯，小麥，玉米，大米，木薯等主食中就含有大量的淀粉。 純淀粉是一種白色，無味，無嗅的粉末，不溶于冷水或酒精。分子式(C6H10O5)n。淀粉因分子內(nèi)氫鍵而卷曲成螺旋結(jié)構(gòu)，可分為直鏈淀粉（糖淀粉）和支鏈淀粉（膠淀粉）。前者為無分支的螺旋結(jié)構(gòu)；后者以24~30個葡萄糖殘基以α-1,4-糖苷鍵首尾相連而成，在支鏈處為α-1,6-糖苷鍵。直鏈淀粉遇碘呈藍(lán)色，支鏈淀粉遇碘呈紫紅色。這是由于淀粉螺旋中央空穴恰能容下碘分子，通過范德華力，兩者形成一種藍(lán)黑色錯合物。實驗證明，單獨的碘分子不能使淀粉變藍(lán)，實際上使淀粉變藍(lán)的是三碘陰離子（I3-）。
淀粉在食品工業(yè)中被加工以產(chǎn)生多種糖。淀粉在溫水中溶解產(chǎn)生糊精，這可以用作增稠劑，硬化則作為粘接劑。淀粉在非食品工業(yè)最廣泛的用途是在造紙過程中作為粘合劑。
