trans-2-Hexen-1-ol is a volatile component of tea and was detected in tea in 1966. Colorless liquid, slightly soluble in water, soluble in ethanol and other organic solvents, boiling point 155℃, relative density 0.8498(16/4℃), refractive index 1.4367(20℃), a strong grass odor. The contents of tea in fresh leaves and finished tea increased greatly in the wilting stage, and then decreased with fermentation and drying.
