Ginger ketone, also known as ginger oil ketone, vanilla-based acetone, is China's "health standard for the use of food additives" (GB2760-1996) stipulates that it is allowed to prepare a food flavor according to the production needs, and the chemical name is 4-(4-hydroxy-3-methoxyphenyl) -2-butanone. Pale yellow or amber colored crystals (acetone, petroleum ether, or ether-petroleum ether) that form viscous liquids after prolonged storage at room temperature. It has a strong ginger like spicy stimulating smell and ginger like spicy taste, with sweet, spicy, rich and deep floral aroma, lasting fragrance. The relative density is 1.138 ~ 1.139(25℃), the melting point is 40 ~ 41℃, the boiling point is 290℃(102℃), and the refractive index is 1.544 ~ 1.545. It can be dissolved in 50% ethanol in a ratio of 1:1, slightly soluble in water and petroleum ether, and soluble in dilute alkali. It evaporates slowly in steam. The solution of silver ammonia nitrate can be reduced when heating. Reaction with ferric chloride alcohol solution turns green. It is isolated from the essential oil of ginger (Zingiberofficinale), and gingerone is the main component of ginger oil. It is prepared by hydrogenation of vanillin and acetone after condensation reaction. It is used as a sweetening agent and food flavor of rich flavor. In scented products can produce "leather", "tobacco" charm. It does not change color easily.
