Propionic acid (PPA) is a weak acid that has been used in food products as a preservative because of its inhibitory effect on microorganisms. It can induce fungal cell death through mitochondria-mediated apoptosis. Propionic acid is used to curb the growth of Candida
albicans, Aspergillus niger, Escherichia coli, Pseudomonas aeruginosa
and Staphylococcus aureus.
