EXAMPLE 1 A mixture of 11.5 g (0.1 mol) of L-proline, 14.8 g (0.1 mol) of methyl pyruvate dimethyl ketal,. 10.8 g (0.2 mol) of sodium methoxide and 200 ml of dioxane was stirred at reflux temperature (97-101° C.) for 5 h. 100 ml of H2 O were subsequently added, and a pH of 1.0 was set using H2 SO4 (1:1). The reaction mixture was stirred for another about 3 hours at room temperature, and the resulting solid was then filtered off with suction. The filtrate was concentrated to half its volume and extracted repeatedly with ethyl acetate. Distillative removal of ethyl acetate gave 16.4 g of residue. Yield: 16.4 g of 1-pyruvyl-L-proline (=90% of theory)
