EXAMPLE 5 498 g of ethyl 4-hydroxybenzoate were suspended in 874 ml of water, and 150 ml of 50% strength sodium hydroxide solution were added at 18°-20° C. in the course of 30 minutes, up to a degree of neutralisation of 0.95. After a further 20 minutes, when a clear solution was present, further 4% strength sodium hydroxide solution (6 ml) was added, whilst stirring. Spray-drying which followed immediately, gave the sodium salt of ethyl 4-hydroxybenzoate with a 4-hydroxybenzoic acid content of 0.05 percent by weight and a water content of 1.5 percent by weight.
